250 g oats (I ground half the amount into flour)
2 large bananas (slightly overripe)
2 teaspoons cinnamon
a pinch of salt
1 teaspoon baking powder
Preheat the oven to 175°C (350°F).
While the oven is heating, mash the bananas into a puree in a bowl, add the remaining ingredients, and mix well.
Let the mixture rest for 10 minutes so the ingredients come together.
Roll out thinly and cut the cookies into any shape you like.
Arrange them on baking paper and bake at 175°C (350°F) for about 15 minutes.
After 15 minutes, take the cookies out of the oven and serve.
You can add chocolate chips or dried fruit if you like.
